I was feeling festive over the weekend because the weather was really gross and rainy so I wanted to experiment with my baking and decided to make some healthy gingerbread cookies. I wanted to create this recipe before the holidays so I had a chance to master it before I revealed it to everyone in December. On Sunday I decided to go to the mall and visit my local Hallmark Gold Crown Store and pick up some festive home accessories to get me in the mood while I was baking. I must say that the recipe turned out great and I can’t want to make it again in December.

Healthy Gingerbread Cookies:

  • 3 cups whole wheat flour
  • 1/3 cup  maple syrup
  • 1/4 cup blackstrap molasses
  • 1 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2-1 tbsp ground ginger
  • 1 egg
  • 2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 4 tbsp applesauce
  • 2 tsp vanilla extract

Instructions:

  • Mix the dry ingredients together in a bowl and then add the wet ingredients and stir together.
  • Preheat oven to 350.
  • Roll the dough onto a floured surface until it is about 1/4 inch thick.
  • Use your desired cookie cutters to create shapes.
  • Bake the cookies for approximately 8 minutes.
